Pecan Pie Cookies

Delicious pecan pie cookies with a gooey caramel center.

Ingredients

  • 1 cup chopped pecans
  • 2 cups all-purpose flour
  • 1/2 teaspoon salt
  • 1 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 1 teaspoon vanilla extract
  • For the caramel filling: 1 cup caramel sauce

Instructions

  1. Preheat oven to 350°F (175°C).
  2. In a bowl, mix flour, salt, and chopped pecans.
  3. In another bowl, cream butter and sugar until light and fluffy.
  4. Add vanilla extract to the butter mixture.
  5. Gradually add the dry ingredients to the wet mixture and stir until combined.
  6. Roll dough into balls and make an indentation in the center.
  7. Fill the indentation with caramel sauce.
  8. Bake for 12-15 minutes or until golden brown.
  9. Cool on a wire rack.

Notes

Ensure caramel is not too hot when filling to avoid spills. Store in an airtight container.
