Pecan Pie Cookies

These Pecan Pie Cookies are a gooey caramel delight, combining the classic flavors of pecan pie in a chewy cookie form.

  • 1 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 1 cup brown sugar, packed
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 2 1/2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 2 cups pecan halves, chopped
  • 1 cup caramel sauce

Instructions

  1. Preheat oven to 350°F (175°C) and line baking sheets with parchment paper.
  2. In a large bowl, cream together butter, granulated sugar, and brown sugar until light and fluffy.
  3. Beat in eggs one at a time, then stir in vanilla extract.
  4. In another bowl, whisk together flour, baking soda, and salt.
  5. Gradually add dry ingredients to the wet mixture, mixing until just combined.
  6. Fold in chopped pecans.
  7. Drop tablespoon-sized balls of dough onto the prepared baking sheets.
  8. Bake for 10-12 minutes or until edges are golden.
  9. Remove from oven and immediately drizzle with caramel sauce.
  10. Allow cookies to cool on the baking sheet for 5 minutes before transferring to a wire rack.

Notes

For a richer flavor, toast the pecans before adding them to the dough. Store in an airtight container for up to 5 days.
