Pecan Pie Cookies

These pecan pie cookies are a delightful twist on the classic pie, with a gooey caramel center.

Ingredients

  • 1 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 1/2 cup brown sugar, packed
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 2 1/2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 cup chopped pecans
  • 1/2 cup caramel sauce

Instructions

  1. Preheat oven to 350°F (175°C) and line baking sheets with parchment paper.
  2. In a large bowl, cream together butter, granulated sugar, and brown sugar until light and fluffy.
  3. Beat in eggs one at a time, then stir in vanilla extract.
  4. In another bowl, whisk together flour, baking powder, and salt.
  5. Gradually add dry ingredients to the wet mixture, mixing until just combined.
  6. Fold in chopped pecans.
  7. Drop dough by tablespoonfuls onto prepared baking sheets.
  8. Make an indentation in the center of each cookie and fill with caramel sauce.
  9. Bake for 12-15 minutes or until edges are golden.
  10. Allow cookies to cool on the baking sheet for 5 minutes before transferring to a wire rack.

Notes

For a gooier center, use extra caramel sauce. Store in an airtight container for up to 3 days.
