I still remember the first time I made this ultra creamy chicken bacon broccoli pasta for my family in our tiny NYC apartment. The scent of sizzling bacon and garlic filled every corner, and my husband peeked over my shoulder and said, “This smells like a hug.” That’s exactly what this dish is — a warm, cheesy, garlicky embrace in a bowl. Growing up in Morocco, my mother taught me that the best meals come from layering simple ingredients with intention. Later, my training in Paris refined my understanding of sauce work and emulsion. This recipe brings those worlds together: the soulfulness of North African home cooking meets the precision of a classic French béchamel, all poured over tender pasta, juicy chicken, crisp bacon, and bright green broccoli. Every forkful delivers that luscious, velvety garlic parmesan sauce you’ll want to drink with a spoon.

Let me paint you a picture: al dente penne coated in a silky, rich sauce that clings to every ridge. Smoky bacon adds a salty crunch, while tender chicken brings heartiness. The broccoli — bright, slightly sweet, and perfectly tender — cuts through the richness with a fresh pop of green. The garlic parmesan sauce is the real star here: it’s velvety, deeply savory, and finished with a whisper of smoked paprika that echoes the spice markets of Marrakech. I use a classic French roux to build the base, then slowly whisk in whole milk and heavy cream for an incomparable creaminess. A pinch of smoked paprika and a dusting of Parmigiano-Reggiano elevate this from everyday pasta to something truly special. Every bite is a balance of textures and flavors that keeps you coming back for “just one more forkful.”

I’ve tested this one pot chicken broccoli pasta more times than I can count — tweaking the ratio of milk to cream, the timing on the broccoli, the ideal doneness for the chicken. What I’m sharing with you today is the version that my family, my neighbors, and my NYC supper club guests have all declared “the best.” The secret? Building the sauce in the same skillet where you cooked the bacon and chicken, so every drop of flavor gets incorporated. Plus, I’ll share my pro tip for keeping the sauce ultra creamy without it breaking or turning grainy — a trick I learned from a sauce chef in a Parisian bistro. Whether you’re a weeknight warrior or a Sunday cook, this creamy chicken bacon broccoli pasta will become your new go-to. Trust me, one bite and you’ll be hooked.

Why This Ultra Creamy Chicken Bacon Broccoli Pasta Recipe Is the Best

The Flavor Secret

The magic starts with the bacon drippings. After cooking the bacon, I leave about a tablespoon of rendered fat in the pan to sauté the garlic and broccoli. This single step infuses the entire dish with a deep, smoky savoriness that you just can’t get from oil alone. Then, the roux — equal parts butter and flour — creates a stable emulsion that lets the garlic and Parmesan shine. A touch of smoked paprika (a nod to my Moroccan roots) adds warmth without heat. Every ingredient is chosen to build layers of flavor, never to overpower.

Perfected Texture

Texture is where this recipe truly stands out. The chicken is seared until golden and juicy, the bacon is rendered crisp, and the broccoli is sautéed just until bright green and tender-crisp. The sauce — whisked slowly and simmered to the perfect nappe consistency — coats the pasta luxuriously without being gluey. I cook the penne al dente so it holds its shape against the rich sauce. Every component retains its identity while coming together in perfect harmony. No soggy pasta, no rubbery chicken, no mushy broccoli — just flawless texture in every bite.

Foolproof & Fast

This recipe is designed for real life. You don’t need any special equipment — just a large skillet and a pot for the pasta. The entire dish comes together in about 45 minutes, making it perfect for busy weeknights. Plus, it’s forgiving: if you don’t have heavy cream, I’ll show you how to use all milk. If you’re out of Parmesan, Pecorino or Gruyère work beautifully. I’ve included detailed timing, visual cues, and my personal pro tips so you can nail it on your first try. Whether you’re a beginner or a seasoned cook, this recipe delivers restaurant-quality results with minimal fuss.

Creamy Chicken Bacon Broccoli Pasta Ingredients

I source my ingredients from the Union Square Greenmarket and my favorite little Italian deli in Greenwich Village. The quality of your dairy and cheese makes a real difference here — spring for whole milk and a good block of Parmigiano-Reggiano. And for the smoked paprika, I still buy it from a spice shop in Brooklyn that reminds me of the souks back home. Below is everything you’ll need to make this ultra creamy chicken bacon broccoli pasta shine.

Ingredients List

  • 12 oz penne pasta (or any short pasta)
  • 2 tablespoons olive oil
  • 2 boneless, skinless chicken breasts, cut into bite-sized pieces
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon Italian seasoning
  • ½ teaspoon smoked paprika
  • Salt and freshly ground black pepper, to taste
  • 6 slices bacon, chopped
  • 3 cloves garlic, minced
  • 2 cups broccoli florets (about 1 small crown)
  • 2 tablespoons unsalted butter
  • 2 tablespoons all-purpose flour
  • 2 cups whole milk
  • 1 cup heavy cream
  • 1 cup freshly grated Parmesan cheese (plus more for garnish)

Ingredient Spotlight

Each ingredient plays a key role in building the flavor and texture of this dish. Here’s what to look for at the store and how to make smart swaps if needed.

Original Ingredient Best Substitution Flavor / Texture Impact
Heavy cream Extra whole milk + 1 tbsp melted butter Slightly less rich, still creamy; sauce may be a touch thinner
Penne pasta Fusilli, rigatoni, or cavatappi Shapes with ridges hold sauce best; cooking time may vary slightly
Broccoli florets Broccolini, asparagus, or green beans Broccolini is milder; asparagus adds earthiness; green beans are crisper
Parmesan cheese Pecorino Romano or Grana Padano Pecorino is saltier and sharper; Grana Padano is milder and creamier
Smoked paprika Regular paprika + a drop of liquid smoke Less smoky depth; liquid smoke adds back the smokiness

How to Make Ultra Creamy Chicken Bacon Broccoli Cheese Pasta — Step-by-Step

This one pot chicken broccoli pasta comes together in a handful of simple steps. Follow along with my visual cues and you’ll have a restaurant-worthy dinner on the table in no time.

Step 1: Cook the Pasta

Bring a large pot of generously salted water to a rolling boil. Add the penne and cook according to package directions until al dente — usually 10–12 minutes. Before draining, reserve about ½ cup of pasta water. Drain the pasta, toss with a drizzle of olive oil to prevent sticking, and set aside.

💡 Stella’s Pro Tip: Salt your pasta water like the sea — about 1 tablespoon per 4 quarts. This is your only chance to season the pasta from within, and it makes a huge difference in the final dish.

Step 2: Sear the Chicken

In a large skillet over medium-high heat, warm the olive oil. Add the chicken pieces and season with garlic powder, onion powder, Italian seasoning, smoked paprika, salt, and pepper. Cook for 6–8 minutes, stirring occasionally, until the chicken is golden brown on all sides and cooked through internally (165°F). Transfer the chicken to a plate and set aside.

⚠️ Common Mistake to Avoid: Don’t overcrowd the skillet! If the chicken pieces are too close together, they’ll steam instead of sear. Cook in a single layer with a little space between each piece for that beautiful golden crust.

Step 3: Cook the Bacon

In the same skillet (no need to wipe it out — all that chicken flavor stays in), add the chopped bacon. Cook over medium heat for 4–5 minutes, stirring occasionally, until the bacon is crispy and the fat is rendered. Use a slotted spoon to remove the bacon to a paper towel-lined plate. Leave about 1 tablespoon of drippings in the pan.

💡 Stella’s Pro Tip: For extra-crispy bacon, start it in a cold skillet and let it heat up gradually. This renders the fat more evenly and gives you perfect crunch every time.

Step 4: Sauté Garlic and Broccoli

Reduce the heat to medium. Add the minced garlic and broccoli florets to the warm bacon drippings. Sauté for 2–3 minutes, stirring frequently, until the garlic is fragrant and the broccoli turns bright green and is just tender. Remove from the skillet and set aside with the chicken.

⚠️ Common Mistake to Avoid: Garlic burns quickly! If your pan is too hot, the garlic will turn bitter in seconds. Keep the heat at medium and stir constantly as soon as the garlic hits the pan.

Step 5: Make the Roux

Reduce the heat to medium-low. In the same skillet, melt the butter. Once it’s bubbling, whisk in the flour and cook, stirring constantly, for 1 minute. The mixture should be smooth and slightly golden. This roux is the foundation of your ultra creamy sauce.

💡 Stella’s Pro Tip: Cook the roux for a full minute to eliminate the raw flour taste. It should smell nutty and look like wet sand. Don’t rush this step — it’s what gives the sauce its silky stability.

Step 6: Create the Creamy Sauce

Slowly pour in the milk and heavy cream, whisking continuously to prevent lumps. Keep whisking until the sauce is smooth and begins to thicken, about 3–4 minutes. It should coat the back of a spoon. Stir in the grated Parmesan until melted and smooth. Taste and adjust salt and pepper.

⚠️ Common Mistake to Avoid: Adding the liquid too fast! Pour in a slow, steady stream while whisking vigorously. If you dump it all at once, you’ll end up with lumps that are nearly impossible to smooth out.

Step 7: Combine Everything

Return the cooked pasta, chicken, bacon, and broccoli mixture to the skillet with the sauce. Gently stir everything together until every piece is well coated. If the sauce seems too thick, add a splash of the reserved pasta water to loosen it to your liking. Heat through for 1–2 minutes.

💡 Stella’s Pro Tip: The pasta water is liquid gold! The starch in the water helps the sauce cling to the pasta and adds a silky finish. Add it 1 tablespoon at a time until the sauce reaches your ideal consistency.

Step 8: Serve and Garnish

Transfer the pasta to serving bowls or a large platter. Garnish with additional grated Parmesan, a sprinkle of freshly cracked black pepper, and a few parsley leaves if you like. Serve immediately while the sauce is warm, creamy, and irresistible.

⚠️ Common Mistake to Avoid: Don’t let the pasta sit before serving! The sauce will continue to thicken as it cools. If you need to hold it, keep it covered over very low heat and stir in a splash of milk or pasta water just before serving.

Step Action Duration Key Visual Cue
1 Cook pasta 10–12 min Al dente — tender but firm to the bite
2 Sear chicken 6–8 min Golden-brown crust, internal temp 165°F
3 Cook bacon 4–5 min Crispy, deep golden brown
4 Sauté garlic & broccoli 2–3 min Garlic fragrant, broccoli bright green
5 Make roux 1 min Smooth, pale golden, nutty aroma
6 Create sauce 3–4 min Thick enough to coat a spoon
7 Combine all 2–3 min Everything evenly coated, sauce glossy
8 Serve Immediately Warm, creamy, garnished with Parmesan

Serving & Presentation

This ultra creamy chicken bacon broccoli cheese pasta is a meal in itself, but a few thoughtful pairings can elevate it into a full dinner experience. I love serving it with a simple arugula salad tossed in lemon vinaigrette — the peppery greens and bright acid cut through the richness beautifully. For something heartier, garlic bread or a crusty baguette is perfect for sopping up every last drop of that garlic parmesan sauce.

When I plate this for guests, I use a wide, shallow bowl and pile the pasta high, then finish with a generous shower of freshly grated Parmigiano-Reggiano, a crack of black pepper, and a tiny sprinkle of smoked paprika for color. A few fresh parsley leaves add a pop of green. It’s the kind of dish that makes everyone at the table go quiet for the first few bites — and then start asking for seconds.

Pairing Type Suggestions Why It Works
Side Dish Arugula salad with lemon vinaigrette, roasted asparagus, or sautéed spinach Bright, acidic greens balance the creamy richness
Bread Garlic bread, crusty sourdough, or warm focaccia Perfect for soaking up every bit of sauce
Beverage Chilled Sauvignon Blanc, light Pinot Noir, or sparkling water with lemon Crisp acidity cuts the cream; bubbles refresh the palate
Garnish Freshly grated Parmesan, cracked black pepper, smoked paprika, fresh parsley Adds visual appeal, extra flavor, and a touch of elegance

Make-Ahead, Storage & Reheating

As a busy NYC food blogger and mom, I’m all about recipes that work with my schedule. This one pot chicken broccoli pasta is fantastic for meal prep — just follow my tips to keep the sauce creamy and the pasta al dente all week long.

Method Container Duration Reheating Tip
Refrigerator Airtight container Up to 4 days Reheat in a skillet over medium-low with a splash of milk or pasta water; stir gently until warmed through
Freezer Freezer-safe container or zip-top bag Up to 2 months Thaw overnight in the fridge; reheat in a skillet with a splash of cream or milk to restore sauciness
Make-Ahead Assemble without pasta, store pasta separately Up to 2 days in advance Cook pasta fresh or undercook by 1 minute; combine with reheated sauce just before serving

My favorite trick for leftovers: add a tiny splash of milk and a pat of butter when reheating, then stir vigorously. This brings the sauce back to life and makes it taste almost as good as the day you made it. For freezer meals, I recommend freezing the sauce and pasta separately for best results.

Variations & Easy Swaps

One of the things I love most about this creamy chicken bacon broccoli pasta is how adaptable it is. Whether you’re cooking for dietary needs or just want to switch things up, these variations are all tested and approved in my NYC kitchen.

Variation Key Change Best For Difficulty Impact
Spicy Moroccan Twist Add harissa paste and preserved lemon Adventurous palates, North African flavor lovers Easy (adds 2 min)
Gluten-Free / Dairy-Free Gluten-free pasta, dairy-free milk + butter, vegan cheese Dietary restrictions, allergen-friendly meals Easy (swap ingredients)
Seasonal Vegetable Swap Replace broccoli with asparagus, zucchini, or bell peppers Seasonal eating, farmers market hauls Easy (adjust cook time)

Spicy Moroccan Twist

This variation is near and dear to my heart. Stir in 1–2 tablespoons of harissa paste (I like the rose harissa from my local Middle Eastern market) along with the garlic in Step 4. Add a teaspoon of finely chopped preserved lemon rind when you combine everything in Step 7. The harissa brings a smoky, layered heat, and the preserved lemon adds a bright, salty-tangy pop that cuts through the creaminess. It’s the taste of my childhood — my mother used to make a version of this with whatever vegetables she had on hand. Serve with a sprinkle of toasted sesame seeds and fresh cilantro for an extra Moroccan touch.

Gluten-Free / Dairy-Free Version

I’ve tested this version for a friend who’s both gluten- and dairy-free, and it turned out beautifully. Use your favorite gluten-free pasta (I like brown rice penne or chickpea pasta). For the sauce, substitute the butter with a high-quality dairy-free butter or olive oil, and use a full-fat oat milk or unsweetened cashew milk in place of the whole milk and heavy cream. Look for a dairy-free Parmesan-style shred — many brands melt surprisingly well. The key is to let the sauce simmer an extra minute or two to thicken, as dairy-free milks have less natural body. The flavor is milder, but still incredibly satisfying and creamy.

Seasonal Vegetable Swap

One of the joys of shopping at NYC farmers markets is discovering what’s in season. In spring, I swap broccoli for slim asparagus spears cut into 2-inch pieces — they cook in the same 2–3 minutes and add an elegant, grassy sweetness. In summer, diced zucchini or yellow squash works beautifully; just sauté them until just tender and slightly golden. For fall, roasted butternut squash cubes (pre-roasted at 400°F for 20 minutes) add a sweet, nutty depth that pairs gorgeously with the garlic parmesan sauce. Each seasonal swap brings its own personality to the dish while keeping the creamy, comforting soul intact.

How do you make the garlic parmesan sauce extra creamy without using heavy cream?

If you don’t have heavy cream on hand, you can still achieve a wonderfully creamy sauce by using a few smart tricks. Start with a roux made from butter and flour — this is your thickening base and it adds body even without cream. Use whole milk (or even 2% in a pinch) and add an extra tablespoon of butter for richness. The real secret is to let the sauce simmer gently for 4–5 minutes, whisking often, so it reduces and thickens naturally. You can also stir in a heaping tablespoon of cream cheese or mascarpone at the end — both add creaminess and a slight tang that mimics the richness of heavy cream. The sauce will be slightly less decadent but still silky, smooth, and absolutely delicious. I tested this version for a reader who was out of cream, and she told me it was “still the best pasta I’ve ever made.”

What can I substitute for broccoli in this chicken bacon pasta recipe?

There are so many delicious substitutes for broccoli in this creamy chicken bacon broccoli pasta, and each one brings its own personality to the dish. My favorite swaps include asparagus (trimmed and cut into 2-inch pieces, sautéed for 2–3 minutes until bright green), broccolini (milder and more tender than broccoli), or green beans (blanched or sautéed until crisp-tender). For a heartier option, try cauliflower florets — they soak up the sauce beautifully and add a subtle sweetness. If you’re looking for a low-carb option, zucchini or yellow squash diced and sautéed until just tender works wonderfully. Each substitute will change the flavor profile slightly, but the dish remains ultra creamy and satisfying. Just adjust the cooking time based on the vegetable you choose — hardier vegetables like cauliflower may need an extra minute or two.

How long should you cook the chicken and bacon before adding them to the pasta?

For perfectly cooked chicken and bacon in this recipe, timing is everything. The chicken pieces should be seared over medium-high heat for 6–8 minutes, stirring occasionally, until they are golden brown on all sides and reach an internal temperature of 165°F. You want a nice crust on the outside while staying juicy inside. The bacon, on the other hand, cooks faster — about 4–5 minutes over medium heat until it’s crispy and the fat is rendered. I recommend cooking the bacon after the chicken so the pan still has those wonderful chicken fond (browned bits) that add flavor to the bacon. Always use a slotted spoon to remove the bacon, and leave about a tablespoon of drippings in the pan for cooking the garlic and broccoli. Both the chicken and bacon get cooked fully before being set aside and added back at the end — this ensures they stay crisp and tender rather than overcooking in the sauce.

Can I use a different type of cheese instead of parmesan for the sauce?

Absolutely! Parmesan is classic, but this garlic parmesan sauce welcomes other cheeses with open arms. Pecorino Romano is my top recommendation — it’s saltier, sharper, and adds a wonderful boldness that stands up to the bacon and chicken. Grana Padano is milder and creamier, making it a great choice if you want a more subtle cheese flavor. For a meltier, more stringy texture, try half Parmesan and half low-moisture mozzarella or Provolone. Gruyère brings a nutty, slightly sweet depth that’s absolutely luxurious in this sauce. If you go with a different cheese, just keep in mind that some cheeses (like Pecorino) are saltier, so you’ll want to adjust your seasoning accordingly. Avoid pre-shredded cheeses, as they contain anti-caking agents that can make the sauce grainy. Always grate your cheese fresh from a block for the smoothest, most flavorful sauce.

Can I make this pasta ahead of time for meal prep?

Yes, this creamy chicken bacon broccoli pasta is excellent for meal prep, but I recommend a few smart strategies to keep it at its best. The most important tip is to cook the pasta just al dente — about 1 minute less than the package directions — so it doesn’t become mushy when reheated. Store the pasta and sauce together in an airtight container in the refrigerator for up to 4 days. When reheating, add a splash of milk, cream, or reserved pasta water to loosen the sauce, and warm it gently in a skillet over medium-low heat, stirring frequently. If you’re prepping for the full week, consider freezing the sauce separately from the pasta — the sauce freezes beautifully for up to 2 months, and you can cook fresh pasta when you’re ready to serve. For best results, I recommend making the full dish and enjoying it within 2–3 days for peak creaminess and texture.

What type of pasta works best for this creamy chicken bacon broccoli dish?

For this ultra creamy chicken bacon broccoli cheese pasta, you want a pasta shape that can hold onto the rich garlic parmesan sauce. Short, ridged pastas are ideal because their nooks and crannies catch every bit of creaminess. Penne is my top choice — its angled cuts and ridges are perfect for trapping sauce. Rigatoni, with its wide tubes and ridges, is another excellent option. Fusilli and cavatappi (the corkscrew shapes) are also fantastic because the twists and grooves hold the sauce beautifully. If you prefer long pasta, fettuccine or pappardelle work well too, though you’ll want to make sure the sauce is thick enough to coat the long strands. Avoid very smooth, delicate pastas like angel hair or thin spaghetti — they won’t hold the sauce as well and can become overwhelmed by the hearty chicken, bacon, and broccoli. Whatever shape you choose, cook it al dente so it maintains a pleasant bite against the creamy sauce.

Can I use pre-cooked or rotisserie chicken to save time?

Absolutely! Using pre-cooked or rotisserie chicken is a fantastic time-saver for this recipe, especially on busy weeknights. Simply shred or chop the chicken into bite-sized pieces and add it in Step 7 when you combine everything with the sauce. Since the chicken is already cooked, you’ll just need to heat it through for 1–2 minutes. However, I recommend still searing the chicken briefly in the skillet if you can — even 2 minutes per side adds a fresh, caramelized flavor that elevates the dish. If you’re using rotisserie chicken, you can skip the searing step entirely and just add it to the sauce to warm. Keep in mind that homemade seared chicken has a juicier, more textured bite, while rotisserie chicken is more tender and shreddy. Both work beautifully, so use whatever fits your schedule. This is one of my favorite shortcuts for turning this into a 30-minute meal.

How do I keep the sauce from breaking or turning grainy?

A broken or grainy sauce is usually the result of high heat or adding dairy too quickly. The best way to keep this garlic parmesan sauce silky smooth is to follow a few key techniques. First, always start with a roux — cooking the butter and flour together for about 1 minute creates a stable base that prevents separation. Second, add your milk and cream slowly — pour in a thin, steady stream while whisking constantly. This gradual incorporation allows the liquid to emulsify into the roux without shocking it. Third, keep the heat at medium-low to medium at most; high heat can cause the cream to curdle. Finally, add your Parmesan cheese off the heat or over very low heat, stirring until just melted. If your sauce does start to look grainy, try whisking in a splash of cold milk or a tablespoon of lemon juice — the acid can sometimes help smooth it out. And remember, patience is key: low and slow creates the creamiest, most stable sauce every time.

Can I add extra vegetables to make this dish even heartier?

Yes, this recipe is very forgiving when it comes to adding extra vegetables, and I often load it up with whatever I have in my CSA box. Sliced mushrooms are a wonderful addition — sauté them with the garlic and broccoli for an earthy, meaty flavor that complements the bacon and chicken. Diced bell peppers (red, yellow, or orange) add sweetness and color; add them at the same time as the broccoli. Chopped spinach or kale can be stirred in at the very end — just let it wilt for about a minute before combining with the pasta. Cherry tomatoes halved and added in the last minute of cooking bring a burst of acidity that cuts through the richness. If you’re adding extra vegetables, keep the total quantity to about 3–4 cups so the sauce-to-vegetable ratio stays balanced. You may also want to add a splash more milk if the sauce seems too thick with all those veggies. This is a great way to clean out your fridge and make the dish even more nutritious.

What’s the best way to reheat leftovers without drying them out?

Reheating creamy pasta dishes can be tricky, but I’ve perfected a method that brings back the silky texture every time. The best approach is to reheat on the stovetop rather than the microwave, which can make the sauce grainy and the pasta unevenly hot. Place the leftovers in a skillet over medium-low heat and add a splash of milk, cream, or even a bit of chicken broth — about 2 tablespoons per serving. Stir gently and frequently, letting the pasta warm through gradually for about 4–5 minutes. If the sauce seems too thick, add another splash of liquid until it reaches your desired consistency. Covering the skillet for the last 2 minutes helps trap steam and rehydrate the pasta. If you’re in a hurry, the microwave works in a pinch: add a tablespoon of milk, cover with a damp paper towel, and heat in 30-second bursts, stirring between each. Never reheat on high heat — it will cause the sauce to separate. With these tricks, your leftovers will taste almost as good as the night you made them.
