  • 2/3 cup baking soda
  • 1 egg yolk beaten with 1 tablespoon water
  • Coarse salt, for sprinkling
  • 8 ounces mozzarella cheese, cut into sticks

Instructions

  1. In a stand mixer bowl, combine warm water, sugar, and kosher salt. Sprinkle the yeast on top and let it sit for 5 minutes until foamy.
  2. Add the flour and melted butter to the yeast mixture. Use the dough hook attachment to mix on low speed until the dough comes together, about 4-5 minutes.
  3. Place the dough in a greased bowl, cover, and let it rise in a warm place for about 1 hour, or until doubled in size.
  4. Preheat oven to 450°F (230°C). Line baking sheets with parchment paper.
  5. Divide the dough into 8 equal pieces. Roll each piece into a rope and flatten slightly. Place a mozzarella stick in the center and fold the dough around it, sealing the edges.
  6. In a large pot, bring 10 cups of water and baking soda to a boil. Boil each pretzel for 30 seconds, then remove and place on the baking sheet.
  7. Brush the pretzels with the egg yolk mixture and sprinkle with coarse salt.
  8. Bake for 12-14 minutes, or until golden brown. Let cool slightly before serving.

Notes

Ensure the dough is sealed well around the cheese to prevent leakage. Serve with marinara sauce for dipping.
