Accordion Potatoes

A fun twist on roasted potatoes where potatoes are cut in an accordion pattern, seasoned with herbs and garlic, then baked until crispy.

Ingredients

  • 4 large potatoes.
  • ¼ cup butter, melted.
  • 4 garlic cloves, minced.
  • 2 tablespoons parsley, chopped.
  • 1 teaspoon Italian seasoning.
  • ¼ teaspoon ground black pepper.
  • ½ teaspoon paprika.
  • Salt to taste.

Instructions

  1. Heat oven to 400°F. Line baking sheet with parchment. Wash and peel potatoes.
  2. Cut potato ends, slice lengthwise into ½-inch rectangles. Soak in cold water.
  3. Place potato between skewers. Make vertical cuts, then diagonal on other side. Stretch to create accordion. Rinse and drain.
  4. Mix butter, garlic, herbs and spices. Brush on both sides of potatoes.
  5. Cook 30 minutes at 400°F, flipping halfway, until golden and crispy. Cool briefly before serving.

Notes

Soaking removes starch for crispier results.
Skewers prevent cutting all the way through.
Cool briefly to maintain accordion shape.
