Ingredients

- 3 slightly under-ripe avocados.
- 1 cup panko breadcrumbs.
- 1/2 cup grated Parmesan.
- 1/2 teaspoon black pepper.
- 2 large eggs, whisked.
- Cooking spray.
- Coarse salt (optional).
- Lime juice (optional).
- 1/2 cup ranch dressing.
- 2 tablespoons sriracha.
Instructions
- Halve avocados, remove pits, scoop out in one piece. Slice each half into 5 strips.
- Mix panko, Parmesan and pepper. Dip slices in egg then coat with panko mixture.
- Spray basket, air fry at 350°F for 3 minutes per side until golden.
- Mix ranch and sriracha.
- Cool briefly, optionally add salt and lime, serve with sauce.
Notes
Best eaten immediately.
Can bake at 350°F for 10-12 minutes.
Use firm avocados.
