Air Fryer Egg Rolls

Crispy egg rolls filled with seasoned meat, vegetables, and Asian spices, air fried until golden. Can also be pan-fried.

Ingredients

  • 1 tablespoon olive oil.
  • 1 lb ground pork or chicken.
  • 1 clove garlic, minced.
  • 1 tablespoon grated ginger.
  • 1 carrot, shredded.
  • 3 scallions, chopped.
  • 3 cups shredded cabbage.
  • 1 tablespoon soy sauce.
  • 1 tablespoon rice vinegar.
  • 12 egg roll wrappers.
  • Oil for brushing.

Instructions

  1. Cook meat 6-8 minutes, add vegetables and seasonings, cook 3-4 minutes more until cabbage wilts.
  2. Remove from heat and let filling cool.
  3. Place 1/4 cup filling in wrapper, wet edges, fold and roll into cylinder.
  4. Place in air fryer basket without stacking, brush with oil. Cook at 350°F for 6-7 minutes, flip, oil again, cook 4-5 minutes more.

Notes

Can be pan-fried instead.
Filling can be made ahead.
Don’t stack while cooking.
