- 1 cup apple cider
- 2 cups all-purpose flour
- 1/2 cup unsalted butter, softened
- 1 cup brown sugar
- 1 teaspoon baking powder
- 1/2 teaspoon ground cinnamon
- 1/4 teaspoon salt
- 1 large egg
- 1 teaspoon vanilla extract
- For the caramel filling: 1 cup caramel sauce
Instructions
- Preheat oven to 350°F and line baking sheets with parchment paper.
- In a medium bowl, whisk together flour, baking powder, cinnamon, and salt.
- In a large bowl, cream butter and brown sugar until light and fluffy.
- Beat in egg and vanilla extract, then gradually add apple cider.
- Slowly mix in the dry ingredients until combined.
- Drop tablespoon-sized scoops of dough onto the prepared sheets, spacing them 2 inches apart.
- Bake for 10-12 minutes or until edges are lightly golden. Let cool completely.
- Once cooled, spread caramel sauce on the flat side of half the cookies and top with the remaining cookies to form sandwiches.
Notes
For best results, use fresh apple cider and store cookies in an airtight container to maintain softness.
