- 2 cups all-purpose flour

- 1 cup brown sugar
- 1/2 cup apple cider
- 1 large egg
- 1 teaspoon vanilla extract
- For the caramel filling: 1 cup caramel sauce, 1/2 cup cream cheese, softened
Instructions
- Preheat oven to 350°F (175°C) and line baking sheets with parchment paper.
- In a bowl, whisk together flour, baking powder, baking soda, salt, cinnamon, and nutmeg.
- In another bowl, cream butter and brown sugar until light and fluffy. Add apple cider, egg, and vanilla; mix well.
- Gradually add dry ingredients to wet ingredients and mix until combined.
- Drop spoonfuls of dough onto prepared sheets and bake for 10-12 minutes. Cool completely.
- For filling: Mix caramel sauce and cream cheese until smooth. Spread on the flat side of one cookie and sandwich with another.
Notes
Ensure cookies are fully cooled before adding filling to prevent melting. Store in an airtight container.
