- 2 slices of whole-grain bread
- 1 ripe avocado, mashed
- 2 large eggs
- 4 ounces smoked salmon
- 1 tablespoon lemon juice
- Salt and pepper to taste
- Optional: Fresh herbs for garnish
Instructions
- Toast the bread slices until golden brown.
- In a saucepan, bring water to a simmer and poach the eggs for about 3-4 minutes.
- Spread the mashed avocado evenly on the toasted bread.
- Top with poached eggs and smoked salmon.
- Drizzle with lemon juice and season with salt and pepper.
- Garnish with fresh herbs if desired and serve immediately.
Notes
For a vegetarian version, omit the smoked salmon.
