  • 3 tablespoonsbutter
  • 3 tablespoonsall-purpose flour

  • 2 cupschicken broth
  • ½ teaspoonground cumin
  • ½ teaspoondried oregano, crushed
  • Salt and black pepper, to taste
  • 4 ouncesdiced green chiles, mild or medium heat
  • cupshredded cheese
  • ½ cupsour cream

Instructions

  1. 1. Prepare the Chicken Filling
  2. In a large mixing bowl, combine shredded chicken, salsa, cumin, oregano, cheese, and chopped green onions.
  3. Mix until all the ingredients are evenly coated and the mixture is creamy and flavorful.
  4. Set aside while you prepare the tortillas.
  5. 2. Assemble the Burritos
  6. Preheat the oven to 400°F and line a baking sheet with parchment paper or foil.
  7. Warm the flour tortillas slightly to make them pliable.
  8. Spoon about ½ cup of the chicken filling into the center of each tortilla.
  9. Fold in the sides and roll tightly into a burrito shape.
  10. Place seam-side down on the baking sheet.
  11. Brush the tops lightly with olive oil for crispness.
  12. 3. Bake the Burritos
  13. Bake for 20–25 minutes, or until golden brown and crisp.
  14. While the burritos bake, prepare the sauce.
  15. 4. Make the Green Chile Sauce
  16. In a medium saucepan, melt butter over medium heat.
  17. Whisk in flour to create a smooth paste and cook for about 2–3 minutes, stirring constantly.
  18. Add the minced garlic and stir for 30 seconds until fragrant.
  19. Gradually pour in chicken broth while whisking to avoid lumps.
  20. Stir in cumin, oregano, salt, and pepper. Cook for about 3–4 minutes, or until slightly thickened.
  21. Remove from heat and stir in diced green chiles, shredded cheese, and sour cream until smooth and creamy.

  24. Remove the burritos from the oven and switch the oven setting to broil on high.
