- For the Chicken Filling
- 3 cupscooked shredded chicken
- 1½ cupssalsa
- 1½ teaspoonsground cumin
- ½ teaspoondried oregano, crushed
- 1¼ cupsshredded cheddar or Monterey Jack cheese
- 2green onions, finely chopped
- 6large flour tortillas
- Olive oil, for brushing
- For the Green Chile Sauce
- 3 tablespoonsbutter
- 3 tablespoonsall-purpose flour
- 1garlic clove, minced
- 2 cupschicken broth
- ½ teaspoonground cumin
- ½ teaspoondried oregano, crushed
- Salt and black pepper, to taste
- 4 ouncesdiced green chiles, mild or medium heat
- ⅓ cupshredded cheese
- ½ cupsour cream
Instructions
- 1. Prepare the Chicken Filling
- In a large mixing bowl, combine shredded chicken, salsa, cumin, oregano, cheese, and chopped green onions.
- Mix until all the ingredients are evenly coated and the mixture is creamy and flavorful.
- Set aside while you prepare the tortillas.
- 2. Assemble the Burritos
- Preheat the oven to 400°F and line a baking sheet with parchment paper or foil.
- Warm the flour tortillas slightly to make them pliable.
- Spoon about ½ cup of the chicken filling into the center of each tortilla.
- Fold in the sides and roll tightly into a burrito shape.
- Place seam-side down on the baking sheet.
- Brush the tops lightly with olive oil for crispness.
- 3. Bake the Burritos
- Bake for 20–25 minutes, or until golden brown and crisp.
- While the burritos bake, prepare the sauce.
- 4. Make the Green Chile Sauce
- In a medium saucepan, melt butter over medium heat.
- Whisk in flour to create a smooth paste and cook for about 2–3 minutes, stirring constantly.
- Add the minced garlic and stir for 30 seconds until fragrant.
- Gradually pour in chicken broth while whisking to avoid lumps.
- Stir in cumin, oregano, salt, and pepper. Cook for about 3–4 minutes, or until slightly thickened.
- Remove from heat and stir in diced green chiles, shredded cheese, and sour cream until smooth and creamy.
- Taste and adjust seasoning as desired.
- 5. Broil and Finish
- Remove the burritos from the oven and switch the oven setting to broil on high.
- Spoon the warm green chile sauce generously over each burrito.
- Sprinkle extra cheese on top, then broil for 2–3 minutes, or until the cheese is melted and bubbly.
- 6. Serve
- Serve the burritos hot, garnished with fresh cilantro, extra green onions, or a squeeze of lime.
- Pair with a side of Mexican rice or a fresh salad for a complete meal.
