Baked Cod with Lemon and Garlic

A light and flavorful baked cod dish with fresh lemon and garlic, perfect for a healthy weeknight dinner.

For the Crust:

  • 4 cod fillets (about 6 oz each)
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • 1 lemon, thinly sliced
  • 1 teaspoon dried oregano
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 tablespoons fresh parsley, chopped

Instructions

1. Prepare the Crust:

  1. Preheat oven to 400Β°F (200Β°C). Lightly grease a baking dish.
  2. Pat the cod fillets dry and place them in the prepared baking dish.
  3. Drizzle olive oil over the fillets, then sprinkle with minced garlic, oregano, salt, and pepper.
  4. Arrange lemon slices on top of the fillets.
  5. Bake for 15-20 minutes, or until the fish flakes easily with a fork.
  6. Garnish with fresh parsley before serving.

Notes

You can customize the seasonings to taste.
