Baked Cottage Cheese Eggs

For the Crust:

  • 4 large eggs
  • 1 cup cottage cheese
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon onion powder
  • 1 tablespoon butter (for greasing)
  • 1 tablespoon chopped chives (optional)

Instructions

1. Prepare the Crust:

  1. Preheat oven to 375°F (190°C). Grease a baking dish with butter.
  2. In a bowl, whisk together eggs, cottage cheese, salt, black pepper, garlic powder, and onion powder until well combined.
  3. Pour the mixture into the greased baking dish.
  4. Bake for 25-30 minutes, or until the eggs are set and the top is lightly golden.
  5. Remove from oven and let cool slightly. Garnish with chopped chives if desired before serving.
