- ¼ cupOlives
- 2sprigs Fresh Parsley
- 2sprigs Fresh Thyme
- 3Garlic Cloves (minced or diced)
- ½ teaspoonof the Mixed Seasoning Above
- 2 tablespoonsWater
- 3 tablespoonsSalted Butter
- Pinch of Salt and Pepper
Instructions
- Preheat your ovento 400℉ (200℃).
- In a small bowl, mix all the ingredients for the fish seasoning. Reserve 1 teaspoon of the seasoning mix for the tomatoes.
- Rub both sides of the fish fillet with the seasoning mix, ensuring it is evenly coated.
- Heat oil in a pan over medium heat.Sear both sidesof the fish for 1 minute until they are nicely charred. The fish should not be fully cooked at this stage.
- Remove the fish from the pan and set it aside.
- In the same pan, add all the ingredients for the tomatoes and olives (except the butter) and sauté for about 3 minutes, stirring continuously.
- Place the fish back in the middle of the pan, add the butter on top, and transfer the pan to the preheated oven. If your pan is not oven-safe, transfer everything to a baking sheet or oven-safe dish.
- Bakeat 400℉ (200℃) for 10 minutes, or until the fish is cooked through and flakes easily with a fork.
- Remove from the oven and serve immediately with your choice of side.
Notes
Choose the Right Fish:For best results, use a firm, white fish like cod, halibut, or snapper. These types hold up well during searing and baking without falling apart. Even Cooking:Make sure your fish fillet is of uniform thickness to ensure even cooking. Seasoning:Don’t skip on the seasoning. The mix of spices is what gives this dish its bold flavor, so be generous when coating the fish.
