Ingredients

  • 4 medium zucchinis, thinly sliced
  • 1 large onion, chopped
  • 1 cup all-purpose flour
  • 2 large eggs

  • 1/2 teaspoon black pepper
  • 1 tablespoon fresh basil, chopped

Instructions

  1. Preheat the oven to 400°F (200°C) and grease a baking sheet.
  2. In a large bowl, combine the sliced zucchinis, chopped onion, flour, eggs, olive oil, salt, pepper, and basil. Mix until well combined.
  3. Spread the mixture evenly on the prepared baking sheet.
  4. Bake for 30-35 minutes, or until golden and crispy.
  5. Allow to cool slightly before slicing and serving.

Notes

For a crispier texture, broil for the last 2-3 minutes. Serve warm as an appetizer or side dish.
