Banana Pecan Cake

A moist and flavorful banana cake with crunchy pecans, perfect for dessert or a sweet snack.

For the Crust:

  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 2 large eggs
  • 3 ripe bananas, mashed
  • 1 teaspoon vanilla extract
  • 1/2 cup buttermilk
  • 1 cup chopped pecans

Instructions

1. Prepare the Crust:

  1. Preheat oven to 350°F (175°C). Grease and flour a 9-inch round cake pan.
  2. In a medium bowl, whisk together flour, baking soda, and salt.
  3. In a large bowl, cream together butter and sugar until light and fluffy. Beat in eggs one at a time, then stir in mashed bananas and vanilla extract.
  4. Alternately add the flour mixture and buttermilk to the banana mixture, beginning and ending with the flour. Fold in chopped pecans.
  5. Pour batter into prepared cake pan and bake for 30-35 minutes, or until a toothpick inserted into the center comes out clean.
  6. Allow cake to cool in pan for 10 minutes, then transfer to a wire rack to cool completely.
