For the Crust:
- 2 cups all-purpose flour
- 1 1/2 tsp baking powder
- 1/2 tsp baking soda
- 1/2 tsp salt
- 1/2 cup unsalted butter, softened
- 1 cup granulated sugar
- 2 large eggs
- 3 ripe bananas, mashed
- 1/2 cup buttermilk
- 1 tsp vanilla extract
- 1/2 cup chopped pecans
- 1 cup caramel sauce
- 1/2 cup heavy cream
- 1/4 cup powdered sugar
Instructions
1. Prepare the Crust:
- Preheat oven to 350°F. Grease and flour two 9-inch round cake pans.
- In a bowl, whisk together flour, baking powder, baking soda, and salt.
- In another bowl, cream butter and sugar until light. Add eggs one at a time, then mix in mashed bananas, buttermilk, and vanilla.
- Gradually add dry ingredients to wet ingredients, mixing until just combined. Fold in chopped pecans.
- Divide batter evenly between pans. Bake for 25-30 minutes or until a toothpick comes out clean. Cool completely.
- Whip heavy cream with powdered sugar until stiff peaks form.
- Place one cake layer on a plate. Spread half the caramel sauce, then half the whipped cream. Top with second layer and repeat.
- Garnish with additional pecans if desired.
