Banana Pecan Caramel Layer Cake

A decadent layered cake with ripe bananas, crunchy pecans, and rich caramel.

For the Crust:

  • 2 cups all-purpose flour
  • 1 1/2 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1/2 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 2 large eggs
  • 3 ripe bananas, mashed
  • 1/2 cup buttermilk
  • 1 tsp vanilla extract
  • 1/2 cup chopped pecans
  • 1 cup caramel sauce
  • 1/2 cup heavy cream
  • 1/4 cup powdered sugar

Instructions

1. Prepare the Crust:

  1. Preheat oven to 350°F. Grease and flour two 9-inch round cake pans.
  2. In a bowl, whisk together flour, baking powder, baking soda, and salt.
  3. In another bowl, cream butter and sugar until light. Add eggs one at a time, then mix in mashed bananas, buttermilk, and vanilla.
  4. Gradually add dry ingredients to wet ingredients, mixing until just combined. Fold in chopped pecans.
  5. Divide batter evenly between pans. Bake for 25-30 minutes or until a toothpick comes out clean. Cool completely.
  6. Whip heavy cream with powdered sugar until stiff peaks form.
  7. Place one cake layer on a plate. Spread half the caramel sauce, then half the whipped cream. Top with second layer and repeat.
  8. Garnish with additional pecans if desired.

Notes

You can customize the seasonings to taste.
