For the Crust:
- 2 cups all-purpose flour
- 1 tsp baking soda
- 1/2 tsp salt
- 1/2 cup unsalted butter, softened
- 1 1/2 cups granulated sugar
- 2 large eggs
- 3 ripe bananas, mashed
- 1/2 cup buttermilk
- 1 tsp vanilla extract
- 1 cup chopped pecans, toasted
- 1 cup caramel sauce
- 2 cups powdered sugar
- 1/2 cup heavy cream
Instructions
1. Prepare the Crust:
- Preheat oven to 350Β°F. Grease and flour two 9-inch round cake pans.
- Whisk together flour, baking soda, and salt in a bowl. Set aside.
- Cream butter and sugar until light and fluffy. Beat in eggs one at a time, then stir in mashed bananas, buttermilk, and vanilla.
- Gradually mix in dry ingredients until just combined. Fold in toasted pecans.
- Divide batter evenly between prepared pans. Bake for 25-30 minutes or until a toothpick comes out clean.
- Cool cakes in pans for 10 minutes, then transfer to wire racks to cool completely.
- For frosting, whisk caramel sauce, powdered sugar, and heavy cream until smooth. Spread between layers and over the top of the cake.
