Beef Lombardi

A comforting casserole with layers of ground beef, tomatoes, cheese, and noodles.

For the Crust:

  • 1 lb ground beef
  • 1 medium onion, chopped
  • 1 can (14.5 oz) diced tomatoes
  • 1 can (8 oz) tomato sauce
  • 1 tsp sugar
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 8 oz wide egg noodles, cooked and drained
  • 1 cup sour cream
  • 1 1/2 cups shredded cheddar cheese

Instructions

1. Prepare the Crust:

  1. Preheat oven to 350°F (175°C).
  2. In a skillet, brown ground beef with onion. Drain excess fat.
  3. Stir in diced tomatoes, tomato sauce, sugar, salt, and pepper. Simmer for 10 minutes.
  4. Layer half the cooked noodles in a greased 9×13-inch baking dish. Top with half the beef mixture, then half the sour cream, and half the cheese.
  5. Repeat layers ending with cheese on top.
  6. Bake uncovered for 30 minutes or until bubbly and cheese is melted.

Notes

You can customize the seasonings to taste.
