Ingredients

  • 1 pound ground beef
  • 1 package (9 ounces) refrigerated cheese tortellini
  • 1 onion, chopped
  • 2 carrots, sliced
  • 2 celery stalks, chopped
  • 3 garlic cloves, minced
  • 4 cups beef broth
  • 1 can (14.5 ounces) diced tomatoes
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • 2 tablespoons olive oil

Instructions

  1. In a large pot, heat olive oil over medium heat.
  2. Add ground beef and cook until browned, breaking it apart with a spoon.
  3. Add onion, carrots, celery, and garlic; cook until vegetables are softened, about 5 minutes.
  4. Stir in beef broth, diced tomatoes, and Italian seasoning; bring to a boil.
  5. Add tortellini and reduce heat; simmer for 10-15 minutes until tortellini is tender.
  6. Season with salt and pepper to taste.
  7. Serve hot.

Notes

For a vegetarian version, substitute ground beef with plant-based crumbles.
