- 1 pound ground beef
- 1 package (9 ounces) refrigerated cheese tortellini
- 1 onion, chopped
- 2 carrots, sliced
- 2 celery stalks, chopped
- 3 garlic cloves, minced
- 4 cups beef broth
- 1 can (14.5 ounces) diced tomatoes
- 1 teaspoon Italian seasoning
- Salt and pepper to taste
- 2 tablespoons olive oil
Instructions
- In a large pot, heat olive oil over medium heat.
- Add ground beef and cook until browned, breaking it apart with a spoon.
- Add onion, carrots, celery, and garlic; cook until vegetables are softened, about 5 minutes.
- Stir in beef broth, diced tomatoes, and Italian seasoning; bring to a boil.
- Add tortellini and reduce heat; simmer for 10-15 minutes until tortellini is tender.
- Season with salt and pepper to taste.
- Serve hot.
Notes
For a vegetarian version, substitute ground beef with plant-based crumbles.
