- 1 pound mixed mushrooms.
- 4 slices ham or prosciutto.
- 1 sheet puff pastry, thawed.

Instructions
- Preheat oven to 400°F.
- Season and sear beef on all sides.
- Cool beef, then coat with mustard.
- Process mushrooms and cook them until dry.
- Layer ham and mushrooms, then wrap beef within.
- Chill the wrapped beef for 20 minutes.
- Wrap the beef in puff pastry and seal with egg wash.
- Score the puff pastry and sprinkle with flaky salt.
- Bake for 25-35 minutes until golden brown.
