Beef Wellington Recipe

An elegant dish featuring beef tenderloin and mushroom duxelles wrapped in prosciutto and golden puff pastry.

Ingredients

  • 1 pound beef tenderloin.
  • 2 tablespoons olive oil.
  • 2 tablespoons yellow mustard.
  • 1 pound mixed mushrooms.
  • 4 slices ham or prosciutto.
  • 1 sheet puff pastry, thawed.
  • 2 large egg yolks.
  • Kosher salt.
  • Black pepper.
  • Flaky salt.

Instructions

  1. Preheat oven to 400°F.
  2. Season and sear beef on all sides.
  3. Cool beef, then coat with mustard.
  4. Process mushrooms and cook them until dry.
  5. Layer ham and mushrooms, then wrap beef within.
  6. Chill the wrapped beef for 20 minutes.
  7. Wrap the beef in puff pastry and seal with egg wash.
  8. Score the puff pastry and sprinkle with flaky salt.
  9. Bake for 25-35 minutes until golden brown.

Notes

Check temperature from multiple angles.
Thaw pastry ahead of time.
Mix different mushroom types for deeper flavor.
Reheat gently to maintain texture.
