For the Crust:
- 1 lb boneless, skinless chicken breasts, diced
- 1 tbsp olive oil
- 1 tsp chili powder
- 1 tsp cumin
- 1/2 tsp garlic powder
- 1/2 tsp paprika
- 8 small corn tortillas
- 1 cup shredded lettuce
- 1/2 cup diced tomatoes
- 1/4 cup chopped cilantro
- 1/4 cup diced red onion
- 1/2 cup shredded cheese
- 1/4 cup sour cream
- 1 lime, cut into wedges
Instructions
1. Prepare the Crust:
- Heat olive oil in a skillet over medium heat.
- Add diced chicken and cook until no longer pink, about 6-8 minutes.
- Stir in chili powder, cumin, garlic powder, and paprika. Cook for another 2 minutes.
- Warm tortillas according to package instructions.
- Assemble tacos by filling tortillas with chicken, lettuce, tomatoes, cilantro, red onion, and cheese.
- Top with sour cream and a squeeze of lime.
