Ingredients

  • 2 tablespoons olive oil

  • 2 cups vegetable broth
  • 1 cup spinach leaves
  • 1/2 cup grated Parmesan cheese
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a large skillet over medium heat.
  2. Add garlic and onion, and sauté until softened, about 3 minutes.
  3. Stir in orzo pasta and cook for 2 minutes, stirring frequently.
  4. Pour in vegetable broth and bring to a boil.
  5. Reduce heat to low, cover, and simmer for 10-12 minutes until orzo is tender.
  6. Stir in spinach and cook until wilted, about 2 minutes.
  7. Remove from heat and stir in Parmesan cheese.
  8. Season with salt and pepper to taste, and serve hot.

Notes
