Ingredients

- 1 cup orzo pasta
- 2 tablespoons olive oil
- 1 clove garlic, minced
- 1 cup chopped onion
- 2 cups vegetable broth
- 1 cup spinach leaves
- 1/2 cup grated Parmesan cheese
- Salt and pepper to taste
Instructions
- Heat olive oil in a large skillet over medium heat.
- Add garlic and onion, and sauté until softened, about 3 minutes.
- Stir in orzo pasta and cook for 2 minutes, stirring frequently.
- Pour in vegetable broth and bring to a boil.
- Reduce heat to low, cover, and simmer for 10-12 minutes until orzo is tender.
- Stir in spinach and cook until wilted, about 2 minutes.
- Remove from heat and stir in Parmesan cheese.
- Season with salt and pepper to taste, and serve hot.
Notes
For a vegan version, substitute Parmesan with a plant-based alternative.
