Pumpkin Oatmeal Muffins

Fall inspired muffins that are perfect for a busy morning! These Pumpkin Oatmeal Muffins will not disappoint! They are so delicious!

Ingredients

  • For the muffins:
  • 1 stick unsalted butter melted
  • 1 cup 2% milk
  • 2 eggs
  • 1/2 cup canned pumpkin puree
  • 1 teaspoon pure vanilla extract
  • 1/2 cup brown sugar
  • 2 cups all-purpose flour
  • 1/2 cup old fashioned oats
  • 2 teaspoons baking soda
  • 1 tsp pumpkin pie spice
  • For the topping:
  • 1/4 cup unsalted butter softened
  • 1/3 cup all-purpose flour
  • 1/2 cup granulated sugar
  • 1/4 cup old fashioned oats
  • 1 teaspoon ground cinnamon or pumpkin pie spice
  • For the drizzle:
  • 1/2 cup powdered sugar
  • 1 tablespoon milk

Instructions

  1. FOR THE MUFFINS:
  2. In large bowl add butter, milk, eggs, pumpkin, vanilla and brown sugar. Whisk together until completely incorporated.
  3. Add in flour, oats, baking soda and pumpkin pie spice. Stir until combined.
  4. Scoop into muffin liners. Set aside.
  5. FOR THE TOPPING:
  6. In small bowl add butter, flour, sugar, oats and cinnamon. Stir together.
  7. Sprinkle the top of each muffin with a little of the topping mixture.
  8. Bake for 12-15 minutes. Cool.
  9. FOR THE DRIZZLE:
  10. Whisk together powdered sugar and milk.
  11. Drizzle over muffins.
  12. Serve and ENJOY!
