Best Seared Scallops with Spicy Cajun Cream Sauce

Perfectly seared scallops served with a rich and spicy Cajun cream sauce.

For the Crust:

  • 1 lb fresh sea scallops
  • 2 tbsp olive oil
  • 1 tbsp butter
  • 1 cup heavy cream
  • 1 tbsp Cajun seasoning
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1/2 tsp paprika
  • 1/4 tsp cayenne pepper
  • Salt and pepper to taste
  • 2 tbsp chopped fresh parsley for garnish

Instructions

1. Prepare the Crust:

  1. Pat the scallops dry with a paper towel and season lightly with salt and pepper.
  2. Heat olive oil in a large skillet over medium-high heat. Once hot, add scallops and sear for 2-3 minutes per side until golden brown. Remove and set aside.
  3. In the same skillet, melt butter over medium heat. Add Cajun seasoning, garlic powder, onion powder, paprika, and cayenne pepper. Stir for 30 seconds to toast the spices.
  4. Pour in heavy cream and bring to a simmer. Cook for 3-4 minutes, stirring occasionally, until the sauce thickens.
  5. Return scallops to the skillet and spoon the sauce over them. Cook for an additional 1-2 minutes to heat through.
  6. Garnish with chopped parsley and serve immediately.

Notes

You can customize the seasonings to taste.
