For the Crust:
- 1 lb fresh sea scallops
- 2 tbsp olive oil
- 1 tbsp butter
- 1 cup heavy cream
- 1 tbsp Cajun seasoning
- 1 tsp garlic powder
- 1 tsp onion powder
- 1/2 tsp paprika
- 1/4 tsp cayenne pepper
- Salt and pepper to taste
- 2 tbsp chopped fresh parsley for garnish
Instructions
1. Prepare the Crust:
- Pat the scallops dry with a paper towel and season lightly with salt and pepper.
- Heat olive oil in a large skillet over medium-high heat. Once hot, add scallops and sear for 2-3 minutes per side until golden brown. Remove and set aside.
- In the same skillet, melt butter over medium heat. Add Cajun seasoning, garlic powder, onion powder, paprika, and cayenne pepper. Stir for 30 seconds to toast the spices.
- Pour in heavy cream and bring to a simmer. Cook for 3-4 minutes, stirring occasionally, until the sauce thickens.
- Return scallops to the skillet and spoon the sauce over them. Cook for an additional 1-2 minutes to heat through.
- Garnish with chopped parsley and serve immediately.
