For the Crust:

  • 1 9-inch pie crust, pre-baked
  • 4 cups fresh strawberries, hulled and sliced
  • 3/4 cup granulated sugar
  • 3 tablespoons cornstarch
  • 1/2 cup water
  • 1 tablespoon lemon juice
  • 1/2 teaspoon vanilla extract
  • Whipped cream for serving (optional)

Instructions

1. Prepare the Crust:

  1. In a medium saucepan, combine sugar, cornstarch, and water. Cook over medium heat, stirring constantly, until the mixture thickens and becomes clear.
  2. Remove from heat and stir in lemon juice and vanilla extract. Let the mixture cool slightly.
  3. Gently fold in the sliced strawberries until they are well coated with the glaze.
  4. Pour the strawberry mixture into the pre-baked pie crust and spread evenly.
  5. Refrigerate for at least 2 hours to allow the pie to set.
  6. Serve chilled with whipped cream if desired.
