For the Crust:
- 1 1/2 cups all-purpose flour
- 1/2 cup unsalted butter, softened
- 1/4 cup granulated sugar
- 1/4 teaspoon salt
- 1 cup blackberry jam
- 1/2 cup chopped pistachios
- 1/4 cup brown sugar
- 1 teaspoon vanilla extract
Instructions
1. Prepare the Crust:
- Preheat oven to 350°F (175°C) and line an 8×8-inch baking pan with parchment paper.
- In a bowl, mix flour, softened butter, granulated sugar, and salt until crumbly. Press evenly into the prepared pan.
- Bake crust for 15 minutes or until lightly golden. Let cool slightly.
- Spread blackberry jam evenly over the crust.
- In a small bowl, combine chopped pistachios, brown sugar, and vanilla extract. Sprinkle over the jam layer.
- Bake for another 15 minutes or until the topping is golden and bubbly.
- Let cool completely before cutting into bars.
