Blackberry Pistachio Dream Bars

A delightful dessert with a buttery crust, sweet blackberry filling, and crunchy pistachio topping.

For the Crust:

  • 1 1/2 cups all-purpose flour
  • 1/2 cup unsalted butter, softened
  • 1/4 cup granulated sugar
  • 1/4 teaspoon salt
  • 1 cup blackberry jam
  • 1/2 cup chopped pistachios
  • 1/4 cup brown sugar
  • 1 teaspoon vanilla extract

Instructions

1. Prepare the Crust:

  1. Preheat oven to 350°F (175°C) and line an 8×8-inch baking pan with parchment paper.
  2. In a bowl, mix flour, softened butter, granulated sugar, and salt until crumbly. Press evenly into the prepared pan.
  3. Bake crust for 15 minutes or until lightly golden. Let cool slightly.
  4. Spread blackberry jam evenly over the crust.
  5. In a small bowl, combine chopped pistachios, brown sugar, and vanilla extract. Sprinkle over the jam layer.
  6. Bake for another 15 minutes or until the topping is golden and bubbly.
  7. Let cool completely before cutting into bars.
