- 1 red onion.
- 55g blue cheese, crumbled.
- 55g fresh breadcrumbs.
- 1 large egg.
- 1 tablespoon parsley, chopped.
- 2 teaspoons Worcestershire sauce.
- 1 teaspoon Dijon mustard.
- 1 teaspoon salt.
- 1/2 teaspoon black pepper.
- Tabasco sauce.
- 6 slices pancetta.
- Onion chutney.
- Blue Cheese Sauce:.
- 150g blue cheese.
- 4–5 tablespoons sour cream.
- 1 tablespoon chives.
- 1–2 tablespoons olive oil.
- 1 teaspoon Worcestershire sauce.
Instructions
- Mix burger ingredients, form 6 patties.
- Chill 30 minutes.
- Cook pancetta until crisp.
- Cook burgers 3-4 minutes per side.
- Mix sauce ingredients.
- Toast buns, spread with chutney.
- Layer burger, pancetta, sauce.
Notes
Chill patties before cooking.
Can be grilled.
Make sauce ahead.
Serve immediately.
