Blue Cheese Burgers

A gourmet burger featuring blue cheese mixed into the patty, topped with crispy pancetta and blue cheese sauce.

Ingredients

  • 500g beef mince.
  • 1 red onion.
  • 55g blue cheese, crumbled.
  • 55g fresh breadcrumbs.
  • 1 large egg.
  • 1 tablespoon parsley, chopped.
  • 2 teaspoons Worcestershire sauce.
  • 1 teaspoon Dijon mustard.
  • 1 teaspoon salt.
  • 1/2 teaspoon black pepper.
  • Tabasco sauce.
  • 6 slices pancetta.
  • Onion chutney.
  • Blue Cheese Sauce:.
  • 150g blue cheese.
  • 45 tablespoons sour cream.
  • 1 tablespoon chives.
  • 12 tablespoons olive oil.
  • 1 teaspoon Worcestershire sauce.

Instructions

  1. Mix burger ingredients, form 6 patties.
  2. Chill 30 minutes.
  3. Cook pancetta until crisp.
  4. Cook burgers 3-4 minutes per side.
  5. Mix sauce ingredients.
  6. Toast buns, spread with chutney.
  7. Layer burger, pancetta, sauce.

Notes

Chill patties before cooking.
Can be grilled.
Make sauce ahead.
Serve immediately.
