Blueberry Cottage Cheese Muffins – Healthy Recipe

For the Crust:

  • 1 cup whole wheat flour
  • 1/2 cup rolled oats
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1 cup cottage cheese
  • 1/4 cup honey
  • 1 egg
  • 1 tsp vanilla extract
  • 1 cup fresh blueberries

Instructions

1. Prepare the Crust:

  1. Preheat oven to 350°F (175°C) and line a muffin tin with liners.
  2. In a bowl, mix flour, oats, baking powder, baking soda, and salt.
  3. In another bowl, blend cottage cheese, honey, egg, and vanilla until smooth.
  4. Combine wet and dry ingredients, then gently fold in blueberries.
  5. Divide batter into muffin cups and bake for 20-25 minutes or until a toothpick comes out clean.
  6. Let cool before serving.
