Ingredients

  • 2 cups fresh blueberries
  • 3 ripe peaches, sliced
  • 1/2 cup crumbled feta cheese
  • 1/4 cup red onion, thinly sliced
  • 1/4 cup sliced almonds
  • For the vinaigrette:
  • 3 tablespoons olive oil
  • 2 tablespoons honey
  • 1 tablespoon fresh lemon juice
  • 1 teaspoon Dijon mustard
  • Salt and pepper to taste

Instructions

  1. In a large bowl, combine the mixed greens, blueberries, sliced peaches, feta cheese, red onion, and sliced almonds.
  2. In a small bowl, whisk together the olive oil, honey, lemon juice, Dijon mustard, salt, and pepper until well emulsified.
  3. Drizzle the vinaigrette over the salad and toss gently to coat all ingredients evenly.
  4. Serve immediately for the freshest taste, or chill for 10-15 minutes if desired.

Notes

This salad is best enjoyed fresh; add the vinaigrette just before serving to prevent sogginess. Pair with grilled chicken for a heartier meal.
