For the Crust:
- 1 cup all-purpose flour
- 1 1/2 teaspoons baking powder
- 1/4 teaspoon salt
- 1/2 cup granulated sugar
- 1/2 cup milk
- 2 tablespoons unsalted butter, melted
- 1 teaspoon vanilla extract
- 2 cups fresh or frozen blueberries
- 1/2 cup granulated sugar
- 1 tablespoon cornstarch
- 1 cup boiling water
Instructions
1. Prepare the Crust:
- Preheat oven to 350°F (175°C). Grease an 8-inch square baking dish.
- In a medium bowl, whisk together flour, baking powder, salt, and 1/2 cup sugar.
- Stir in milk, melted butter, and vanilla extract until just combined. Spread batter into the prepared baking dish.
- In another bowl, toss blueberries with 1/2 cup sugar and cornstarch. Sprinkle evenly over the batter.
- Carefully pour boiling water over the top of the blueberry mixture. Do not stir.
- Bake for 45-50 minutes, or until the top is golden and the cake is set. Let cool slightly before serving.
