For the Crust:
- 1 1/2 cups graham cracker crumbs
- 1/4 cup melted butter
- 24 oz cream cheese, softened
- 3/4 cup granulated sugar
- 3 large eggs
- 1 tsp vanilla extract
- 1 cup prepared vanilla pudding or custard
- 1/2 cup heavy cream
- 4 oz semi-sweet chocolate, chopped
Instructions
1. Prepare the Crust:
- Preheat oven to 325Β°F. Mix graham cracker crumbs with melted butter and press into a 9-inch springform pan.
- Beat cream cheese and sugar until smooth. Add eggs one at a time, then mix in vanilla.
- Pour cheesecake batter over crust. Bake for 45-50 minutes until center is set. Cool completely.
- Spread vanilla pudding over cooled cheesecake. Refrigerate for 2 hours.
- Heat heavy cream until steaming, pour over chopped chocolate, let sit for 2 minutes, then stir until smooth. Spread ganache over pudding layer.
- Chill for at least 4 hours before serving.
