Ingredients

  • 1 sheet frozen puff pastry, thawed
  • 1 wheel (8 ounces) brie cheese
  • 1/4 cup apricot preserves
  • 1 egg, beaten for egg wash
  • Optional: Fresh rosemary or thyme for garnish

Instructions

  1. Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Roll out the thawed puff pastry on a lightly floured surface.
  3. Place the brie wheel in the center of the pastry and spread the apricot preserves on top.
  4. Fold the pastry edges up and around the brie to form a box shape, sealing the edges with the egg wash.
  5. Brush the entire pastry with the remaining egg wash and chill in the refrigerator for 15 minutes.
  6. Bake for 20-25 minutes, or until the pastry is golden brown and puffed.
  7. Let cool for 10 minutes before serving.

Notes
