- 1 small onion, diced
- 2 cloves garlic, minced
- 3 cups peeled and diced potatoes
- 4 cups chopped broccoli florets
- 4 cups chicken or vegetable broth
- 1 cup milk
- 2 cups shredded cheddar cheese
- Salt and pepper to taste

- In a large pot over medium heat, melt butter and sauté onion until translucent, about 4 minutes.
- Add garlic and cook until fragrant, about 30 seconds.
- Stir in potatoes, broccoli, and broth. Bring to a boil, reduce heat, cover, and simmer until vegetables are tender, about 15 minutes.
- Add milk, then use an immersion blender to puree the soup to desired texture (smooth or chunky).
- Add shredded cheddar cheese and stir until melted and smooth.
- Season with salt and pepper to taste. Serve hot.
