Broccoli Tree Potato Bites

Fun and healthy broccoli and potato bites shaped like trees, perfect for kids.

Ingredients

  • 2 cups fresh broccoli florets
  • 3 large potatoes, peeled and diced
  • 1/2 cup shredded cheddar cheese
  • 1 egg
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 cup breadcrumbs

Instructions

  1. Boil the potatoes in salted water until tender, about 15 minutes.
  2. Steam the broccoli florets until bright green and slightly tender, about 5 minutes.
  3. Mash the boiled potatoes in a bowl, then mix in the cheese, egg, salt, and pepper.
  4. Form the potato mixture into small base shapes, then insert a broccoli floret on top to resemble a tree.
  5. Roll the bases in breadcrumbs.
  6. Bake in a preheated oven at 400°F for 15-20 minutes until golden.
