The Burrata-Filled “Golden Snitch” Arancini ✨🧀

Crispy Italian rice balls filled with creamy burrata, shaped like a Golden Snitch from Harry Potter for a fun twist.

Ingredients

  • 1 1/2 cups Arborio rice
  • 4 cups chicken or vegetable stock
  • 1/2 cup grated Parmesan cheese
  • 8 oz fresh burrata cheese, drained and torn into pieces
  • 1 small onion, finely chopped
  • 2 garlic cloves, minced
  • 1/4 cup white wine (optional)
  • 2 eggs, lightly beaten
  • 1 cup all-purpose flour
  • 2 cups panko breadcrumbs
  • Vegetable oil, for frying
  • Salt and black pepper, to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  1. In a large pot, heat 2 tablespoons of oil over medium heat. Add the chopped onion and garlic, and sauté until softened, about 5 minutes.
  2. Add the Arborio rice and stir to coat in the oil. Cook for 1-2 minutes until the rice is slightly toasted.
  3. Pour in the white wine if using, and stir until it's absorbed. Gradually add the stock, one cup at a time, stirring frequently and allowing each addition to be absorbed before adding the next. Continue until the rice is al dente, about 18-20 minutes.
  4. Remove from heat and stir in the grated Parmesan cheese. Season with salt and pepper. Spread the rice on a baking sheet to cool completely.
  5. Once cooled, take about 2 tablespoons of rice mixture and flatten it in your palm. Place a piece of burrata in the center and form the rice around it to make a ball. Repeat with the remaining mixture.
  6. Set up a breading station: one bowl with flour, one with beaten eggs, and one with breadcrumbs.
  7. Dredge each rice ball in flour, then dip in the beaten eggs, and finally coat with breadcrumbs. Place on a plate and chill in the refrigerator for 15-20 minutes.
  8. Heat vegetable oil in a deep fryer or large pot to 350°F (175°C). Fry the rice balls in batches until golden brown and crispy, about 3-4 minutes per batch. Drain on paper towels.
  9. Garnish with chopped fresh parsley and serve warm.

Notes

Ensure the burrata is fresh and well-drained to prevent the arancini from becoming soggy. For a Golden Snitch effect, you can add edible gold leaf or dust if desired.
