- 2 tablespoons olive oil
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 head cabbage, chopped
- 4 carrots, sliced
- 4 celery stalks, sliced
- 1 green bell pepper, chopped
- 1 can (14.5 oz) diced tomatoes
- 6 cups vegetable broth
- 1 teaspoon dried oregano
- Salt and pepper to taste
Instructions
- Heat olive oil in a large pot.
- Add onion and garlic; cook until softened.
- Add cabbage, carrots, celery, and bell pepper; cook for 5 minutes.
- Stir in tomatoes, broth, oregano, salt, and pepper.
- Bring to a boil, then simmer for 30-40 minutes.
