- 1 sheet puff pastry, thawed
- 2 medium tomatoes, thinly sliced
- 8 oz fresh mozzarella, sliced
- Fresh basil leaves
- 2 tbsp olive oil
- Salt and pepper to taste
- Balsamic glaze for drizzling
Instructions
- Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.
- Roll out the puff pastry sheet on a lightly floured surface and cut into 12 equal squares.
- Place the pastry squares on the prepared baking sheet.
- Brush each square with olive oil and season with salt and pepper.
- Top each square with a slice of tomato and a slice of mozzarella.
- Add a fresh basil leaf on top of each.
- Bake in the preheated oven for 12-15 minutes, or until the pastry is golden and puffed.
- Remove from the oven and drizzle with balsamic glaze before serving.
Notes
For the best flavor, use ripe tomatoes and fresh mozzarella. These can be served warm or at room temperature.
