Ingredients

  • 2 medium delicata squash, halved lengthwise and seeded
  • 2 tablespoons olive oil
  • 1/2 teaspoon kosher salt
  • 1/4 teaspoon black pepper
  • 1 cup whole-milk ricotta cheese
  • 1/4 cup hot honey
  • 1/2 cup fresh or frozen cranberries
  • 1 tablespoon apple cider vinegar
  • Fresh thyme leaves for garnish

Instructions

  1. Preheat the oven to 425°F and line a baking sheet with parchment paper.
  2. Brush the cut sides of the delicata squash with olive oil and season with salt and pepper.
  3. Place the squash cut-side down on the baking sheet and roast for 20-25 minutes, or until tender and caramelized.
  4. While the squash is roasting, combine hot honey, cranberries, and apple cider vinegar in a small saucepan. Heat over medium until cranberries burst and the mixture thickens, about 5-7 minutes.
  5. Remove squash from oven and let cool slightly. Fill the cavities with ricotta cheese and drizzle with the hot honey cranberry glaze.
  6. Garnish with fresh thyme leaves and serve immediately.

Notes

For a spicier glaze, add a pinch of red pepper flakes to the honey mixture. Serve warm for the best flavor.
