- 2 medium delicata squash, halved lengthwise and seeded
- 2 tablespoons olive oil
- 1/2 teaspoon kosher salt
- 1/4 teaspoon black pepper
- 1 cup whole-milk ricotta cheese
- 1/4 cup hot honey
- 1/2 cup fresh or frozen cranberries
- 1 tablespoon apple cider vinegar
- Fresh thyme leaves for garnish
Instructions
- Preheat the oven to 425°F and line a baking sheet with parchment paper.
- Brush the cut sides of the delicata squash with olive oil and season with salt and pepper.
- Place the squash cut-side down on the baking sheet and roast for 20-25 minutes, or until tender and caramelized.
- While the squash is roasting, combine hot honey, cranberries, and apple cider vinegar in a small saucepan. Heat over medium until cranberries burst and the mixture thickens, about 5-7 minutes.
- Remove squash from oven and let cool slightly. Fill the cavities with ricotta cheese and drizzle with the hot honey cranberry glaze.
- Garnish with fresh thyme leaves and serve immediately.
Notes
For a spicier glaze, add a pinch of red pepper flakes to the honey mixture. Serve warm for the best flavor.
