- 2 medium delicata squash, halved and sliced into 1/2-inch crescents
- 2 tablespoons olive oil
- Salt and pepper to taste
- 1 cup ricotta cheese
- 1/4 cup hot honey
- 1/2 cup fresh cranberries
- 1 tablespoon apple cider vinegar
- 1 teaspoon red pepper flakes
- Fresh herbs for garnish
Instructions
- Preheat the oven to 425°F and line a baking sheet with parchment paper.
- Toss the delicata squash slices with olive oil, salt, and pepper, then spread them evenly on the baking sheet.
- Roast the squash in the oven for 20-25 minutes, or until caramelized and tender, flipping halfway through.
- While the squash is roasting, prepare the glaze: In a small saucepan, combine hot honey, cranberries, apple cider vinegar, and red pepper flakes. Simmer over medium heat for 5-7 minutes until the cranberries burst and the mixture thickens.
- Remove the squash from the oven and arrange on a serving platter. Dollop with ricotta cheese and drizzle with the hot honey cranberry glaze.
- Garnish with fresh herbs and serve immediately.
Notes
For a milder version, reduce the red pepper flakes. Pair with grilled proteins for a complete meal.
