Caramelized Delicata Squash with Ricotta & Hot Honey Cranberry Glaze

  • 2 medium delicata squash, halved and sliced into 1/2-inch crescents
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • 1 cup ricotta cheese
  • 1/4 cup hot honey
  • 1/2 cup fresh cranberries
  • 1 tablespoon apple cider vinegar
  • 1 teaspoon red pepper flakes
  • Fresh herbs for garnish

Instructions

  1. Preheat the oven to 425°F and line a baking sheet with parchment paper.
  2. Toss the delicata squash slices with olive oil, salt, and pepper, then spread them evenly on the baking sheet.
  3. Roast the squash in the oven for 20-25 minutes, or until caramelized and tender, flipping halfway through.
  4. While the squash is roasting, prepare the glaze: In a small saucepan, combine hot honey, cranberries, apple cider vinegar, and red pepper flakes. Simmer over medium heat for 5-7 minutes until the cranberries burst and the mixture thickens.
  5. Remove the squash from the oven and arrange on a serving platter. Dollop with ricotta cheese and drizzle with the hot honey cranberry glaze.
  6. Garnish with fresh herbs and serve immediately.

Notes

For a milder version, reduce the red pepper flakes. Pair with grilled proteins for a complete meal.
