- 2 cups all-purpose flour
- 1 cup grated carrots
- 1 cup grated zucchini
- 1 cup grated apple
- 1/2 cup vegetable oil
- 1 cup sugar
- 2 eggs
- 1 tsp baking soda
- 1 tsp cinnamon
Instructions
- Preheat oven to 350°F.
- In a large bowl, mix flour, baking soda, and cinnamon.
- In another bowl, beat eggs, sugar, and oil.
- Add grated vegetables and fruit to the wet mixture.
- Combine wet and dry ingredients.
- Pour into a greased loaf pan.
- Bake for 60 minutes.
