For the Crust:
- 4 large tomatoes
- 1 cup breadcrumbs
- 1/2 cup grated Parmesan cheese
- 1/2 cup shredded mozzarella cheese
- 2 cloves garlic, minced
- 2 tablespoons fresh basil, chopped
- 1 tablespoon olive oil
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
Instructions
1. Prepare the Crust:
- Preheat oven to 375°F (190°C).
- Cut the tops off the tomatoes and scoop out the pulp, leaving a 1/2-inch shell. Reserve the pulp for another use.
- In a bowl, mix breadcrumbs, Parmesan, mozzarella, garlic, basil, olive oil, salt, and pepper.
- Stuff each tomato with the breadcrumb mixture and place in a baking dish.
- Bake for 25-30 minutes until the tomatoes are tender and the topping is golden brown.
