Cheesy Baked Stuffed Tomatoes

Juicy tomatoes stuffed with a cheesy, herbed breadcrumb mixture and baked to perfection.

For the Crust:

  • 4 large tomatoes
  • 1 cup breadcrumbs
  • 1/2 cup grated Parmesan cheese
  • 1/2 cup shredded mozzarella cheese
  • 2 cloves garlic, minced
  • 2 tablespoons fresh basil, chopped
  • 1 tablespoon olive oil
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions

1. Prepare the Crust:

  1. Preheat oven to 375°F (190°C).
  2. Cut the tops off the tomatoes and scoop out the pulp, leaving a 1/2-inch shell. Reserve the pulp for another use.
  3. In a bowl, mix breadcrumbs, Parmesan, mozzarella, garlic, basil, olive oil, salt, and pepper.
  4. Stuff each tomato with the breadcrumb mixture and place in a baking dish.
  5. Bake for 25-30 minutes until the tomatoes are tender and the topping is golden brown.

Notes

You can customize the seasonings to taste.
