Cheesy Beef Chimichangas

Crispy fried tortillas stuffed with seasoned ground beef and melted cheese.

For the Crust:

  • 1 lb ground beef
  • 1 packet taco seasoning
  • 1 cup shredded cheddar cheese
  • 6 large flour tortillas
  • 1/2 cup refried beans
  • 1/4 cup diced onions
  • Vegetable oil for frying
  • Sour cream and salsa for serving

Instructions

1. Prepare the Crust:

  1. Brown ground beef in a skillet over medium heat. Drain excess fat.
  2. Add taco seasoning and water according to packet instructions. Simmer for 5 minutes.
  3. Spread refried beans on each tortilla. Top with beef mixture, cheese, and onions.
  4. Fold tortillas into burrito shapes, tucking in the ends securely.
  5. Heat oil in a deep skillet to 350Β°F. Fry chimichangas for 2-3 minutes per side until golden brown.
  6. Drain on paper towels and serve hot with sour cream and salsa.

Notes

You can customize the seasonings to taste.
