- 2 pounds baby potatoes, halved
- 1 packet (1 ounce) ranch seasoning mix
- 4 cloves garlic, minced
- 1 cup shredded cheddar cheese
- 2 ribeye steaks (about 8 ounces each)
- 2 tablespoons olive oil
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- Preheat oven to 400°F (200°C).
- In a large bowl, toss the halved potatoes with olive oil, ranch seasoning, minced garlic, salt, and pepper until evenly coated.
- Spread the potatoes on a baking sheet and roast for 25-30 minutes, or until golden and tender.
- While potatoes are roasting, season the steaks with salt and pepper, then grill or pan-sear for 4-5 minutes per side for medium-rare.
- Remove potatoes from oven, sprinkle with shredded cheese, and place the cooked steaks on top.
- Return to oven for an additional 5 minutes to melt the cheese.
- Garnish with fresh parsley and serve immediately.
Notes
For extra flavor, marinate the steaks in garlic and herbs for 30 minutes before cooking.
