- 1 pound ground beef
- 1 cup uncooked white rice
- 1 can (10.5 ounces) cream of mushroom soup
- 2 cups shredded cheddar cheese
- 1 onion, chopped
- 2 cups beef broth
- Salt and pepper to taste
Instructions
- Preheat oven to 350°F (175°C).
- In a skillet, brown the ground beef over medium heat; drain excess fat.
- In a large bowl, combine the browned beef, uncooked rice, cream of mushroom soup, chopped onion, beef broth, salt, and pepper.
- Transfer the mixture to a greased casserole dish and spread evenly.
- Sprinkle shredded cheddar cheese over the top.
- Cover and bake for 45 minutes, then uncover and bake for an additional 15 minutes or until rice is tender and cheese is melted.
Notes
This casserole can be prepared ahead and refrigerated; just add 10 minutes to baking time. Pairs well with vegetables.
