For the Crust:
- 1 lb ground beef
- 1/2 cup breadcrumbs
- 1 large egg
- 1/4 cup milk
- 1 tsp garlic powder
- 1 tsp onion powder
- 1/2 tsp salt
- 1/2 tsp black pepper
- 1 cup shredded cheddar cheese
- 1/4 cup ketchup
- 1 tbsp brown sugar
- 1 tsp mustard
Instructions
1. Prepare the Crust:
- Preheat oven to 375°F and grease a mini muffin tin.
- In a large bowl, mix ground beef, breadcrumbs, egg, milk, garlic powder, onion powder, salt, and pepper until well combined.
- Divide the mixture into 24 portions and flatten each into a small patty.
- Place a small amount of shredded cheese in the center of each patty and fold the edges to enclose the cheese, forming a ball.
- Place each stuffed meatball into the prepared muffin tin.
- In a small bowl, mix ketchup, brown sugar, and mustard. Brush this glaze over the top of each meatloaf bite.
- Bake for 20-25 minutes or until cooked through. Let cool slightly before serving.
