Cheesy Stuffed Meatloaf Bites

Mini meatloaf bites stuffed with gooey cheese, perfect for appetizers or a fun main dish.

For the Crust:

  • 1 lb ground beef
  • 1/2 cup breadcrumbs
  • 1 large egg
  • 1/4 cup milk
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • 1 cup shredded cheddar cheese
  • 1/4 cup ketchup
  • 1 tbsp brown sugar
  • 1 tsp mustard

Instructions

1. Prepare the Crust:

  1. Preheat oven to 375°F and grease a mini muffin tin.
  2. In a large bowl, mix ground beef, breadcrumbs, egg, milk, garlic powder, onion powder, salt, and pepper until well combined.
  3. Divide the mixture into 24 portions and flatten each into a small patty.
  4. Place a small amount of shredded cheese in the center of each patty and fold the edges to enclose the cheese, forming a ball.
  5. Place each stuffed meatball into the prepared muffin tin.
  6. In a small bowl, mix ketchup, brown sugar, and mustard. Brush this glaze over the top of each meatloaf bite.
  7. Bake for 20-25 minutes or until cooked through. Let cool slightly before serving.

Notes

You can customize the seasonings to taste.
