Cherry Cobbler Muffins

Sweet muffins filled with cherries and topped with buttery streusel. Like having dessert for breakfast.

Ingredients

  • 2 cups all-purpose flour + 1 tablespoon.
  • 1/2 teaspoon salt.
  • 2 teaspoons baking powder.
  • 2 large eggs.
  • 1/4 cup salted butter, melted.
  • 1/2 cup granulated sugar.
  • 1 teaspoon vanilla extract.
  • 3/4 cup milk.
  • 21 ounces cherry pie filling.
  • 1/4 cup cold butter, cubed.
  • 1/2 cup flour.
  • 1 teaspoon baking powder.
  • 1/4 cup sugar.
  • 1/4 teaspoon cinnamon.
  • 1 tablespoon milk.

Instructions

  1. Heat oven to 375°F. Line muffin pan with liners.
  2. Sift flour, salt and baking powder.
  3. Whisk eggs, melted butter, sugar, vanilla and milk.
  4. Mix wet into dry ingredients until just combined.
  5. Rinse and drain half the cherries. Toss with flour and fold into batter.
  6. Divide batter in pan. Top with remaining cherry filling.
  7. Mix cold butter, flour, sugar and cinnamon until crumbly. Add milk.
  8. Top with streusel. Bake 22-25 minutes until done.

Notes

Serve warm.
Don’t overmix batter.
Use cold butter for streusel.
