For the Crust:
- 1 1/2 cups all-purpose flour
- 1 tsp baking powder
- 1/2 tsp baking soda
- 1/4 tsp salt
- 1/2 cup unsalted butter, softened
- 3/4 cup granulated sugar
- 2 large eggs
- 1 tsp vanilla extract
- 1/2 cup buttermilk
- 1 tbsp lemon zest
- 2 tbsp lemon juice
- 1/2 cup chopped cherries (fresh or frozen)
- 1 cup powdered sugar
- 1/2 cup cream cheese, softened
- 1/4 cup cherry jam
Instructions
1. Prepare the Crust:
- Preheat oven to 350Β°F (175Β°C). Line a muffin tin with cupcake liners.
- In a bowl, whisk together flour, baking powder, baking soda, and salt.
- In another bowl, beat butter and sugar until light and fluffy. Add eggs one at a time, then mix in vanilla.
- Alternately add the dry ingredients and buttermilk to the butter mixture, starting and ending with dry ingredients.
- Fold in lemon zest, lemon juice, and chopped cherries.
- Divide batter evenly among cupcake liners. Bake for 18-20 minutes or until a toothpick comes out clean. Let cool.
- For frosting, beat cream cheese until smooth. Gradually add powdered sugar, then mix in cherry jam until well combined.
- Frost cooled cupcakes and serve.
