- 1/2 cup unsalted butter, chilled
- 1 large egg yolk
- 1/4 cup cold water
- 2 cups ricotta cheese
- 1 cup powdered sugar
- 1 teaspoon vanilla extract
- 1 cup mini chocolate chips
- Optional: powdered sugar for dusting
Instructions
- Preheat oven to 350°F (175°C).
- In a bowl, mix flour, sugar, and salt. Cut in butter until crumbly.
- Add egg yolk and water; mix until dough forms. Press into a pie dish.
- Bake crust for 15 minutes or until golden. Let cool.
- In another bowl, combine ricotta, powdered sugar, and vanilla until smooth.
- Fold in chocolate chips. Pour filling into cooled crust.
- Refrigerate for at least 2 hours before serving. Dust with powdered sugar if desired.
Notes
Ensure ricotta is well-drained for the best texture. Store leftovers in the refrigerator for up to 3 days.
